Milk Enriched Recipes         Milk is a dairy product that is easily available, affordable and full of nutrients that it is impossible to be healthy without it. This white creamy beverage from cows or other four-legged mammals can be an ingredient in hundreds of dishes anywhere in the world.

To sample a few, here are two most-loved dishes with milk as a flavor enhancer; you can try your own version of it.

  1. Nutty Bread Pudding

Every time we have stale bread we either make French toast or just toss the old bread in the trash. But to many homemakers, they make delicious bread puddings! This amazingly versatile pastry you can make with almost anything. You can add different nuts, berries, sweet fruits or meat.

Ingredients:

4 cups or 1 large loaf of Italian or French bread, cubed

4 eggs

¾ cup white sugar

2 cups (500 ml) evaporated milk

½ tsp (2 ml) ground cinnamon

5 ml vanilla extract

1 medium-sized apple, peeled and cubed

½ cup raisins

¼ cup chopped walnuts

3 tbsp butter, melted

Procedure:

Using a large mixing bowl, mix together the evaporated milk, eggs, butter, vanilla extract, cinnamon powder and sugar, whisk until well blended. Add the bread, raisins, walnuts and apple cubes and mix well until all the ingredients are coated with milk.

Spread the mixture in a glass baking dish coated thinly with butter and bake in the preheated oven for about 45 minutes or until the edges are raised and golden brown. Prick the center with a toothpick and if it comes out clean, it is done. Serve warm with tea or coffee.

  1. Creamy Shell Pasta Supreme

A steamy pasta soup is an all-time favorite dish that never goes out of style. This can be anyone’s comfort food especially during the winter months and when you are feeling low, this soup is the right one to restore you.

Ingredients:

½ cup shell pasta

 2 cups evaporated milk

4 bacon strips cut in dice

1 can (10 oz) kidney beans

1 cup carrot strips

1 medium size onion, chopped

1 clove garlic, minced

2 cups beef stock

2 tbsp all-purpose flour

1 cup grated Parmesan cheese

1 can (398 ml) spaghetti sauce

1 cup water

Salt to taste     

Procedure:

Fry bacon strips until crispy. Drain excess oil on a paper towel. Keep aside. Sauté garlic and onion in the bacon oil until golden brown.

Add beef stock, spaghetti sauce, beans, carrots, and water. Bring to boil while stirring occasionally. Add shell pasta, cover and let simmer for 10 minutes until pasta is soft but al dente.

Make a paste by adding a small amount of milk into the flour. Add the remaining milk in the pot and stir in the flour paste to make a thick sauce. Cook over medium heat until soup thickens. Add salt to taste.  Sprinkle bacon and cheese on top of each serving.
