Food is as essential to our body as the air we breathe or the water we drink. When we are hungry, our stomach churns and hunger pangs tell our brain to seek food to satisfy this craving. When we are busy with work or other activities and could not eat immediately, our senses go crazy and we tend to grab just about any kind of grub to calm our grumbling belly. Junk foods may keep our gastric juices quiet for a few hours, but you don’t want to make it a habit; dire consequences await you if you do. Therefore, despite your hectic schedule, you have to find time to make yourself a nutritious meal, at least, four to five times a week. When you find that time, go splurge a little bit on a comfort food like these Greek-style meatballs with tomato paste.
Greek-style Meatballs with Tomato Paste
500g ground beef
3 cloves of garlic, chopped
2 medium-sized eggs
½ tsp cinnamon powder
¼ corn oil or olive oil
1 cup breadcrumbs
A dash of salt and ground pepper
3 cups tomato juice
1 medium-size red onion, minced
2 cloves minced garlic
1 tbsp Tomato Paste
2 tsp cooking oil
1 cup red wine (optional)
1 tsp white sugar
salt and black pepper powder
1 bay leaf
How to Cook:
- To prepare the meatballs, mix all ingredients in a mixing bowl and knead thoroughly. Allow mixture to soak for an hour in the refrigerator.
- Mould the patty into round or oblong shapes and fry over low fire until golden brown. Set aside.
- To prepare the gravy, stir-fry onions first, followed by garlic. Slowly add wine (optional), tomato juice, sugar, tomato paste and bay leaf. Season to taste. Slow down the fire after gravy comes to a boil and simmer for a few minutes or until gravy thickens.
- Add the meatballs while stirring slowly for another 10 minutes.
Serve while hot with a cup of steamed rice. Garnish with your favourite herb and indulge!
