How to Make No-Bake Chocolate and Oats Cookies

Ingredients:

3 cups quick-cooking oats                                     2/3 cup plain peanut butter

1/2 cup oil (coconut oil is best)                                1/3 cup plain cocoa powder

1 1/2  teaspoon vanilla extract

Procedure:

  1. Use parchment paper to line 2 baking pans
  2. Mix in a saucepan all the liquid ingredients (peanut butter and coconut oil) and cook for 1 minute on medium-high heat, stirring constantly to prevent lumps from forming
  3. Add cocoa powder, oats and vanilla and mix well
  4. Scoop the mixture into the baking pan (use an ice cream scoop to get even sizes) and let it sit for 15 minutes inside the freezer
